Président Brie, Walnut and St. Dalfour Apricot Jam Phyllo Rolls

As the rolls bake, the phyllo turns beautifully golden and crisp, while the warm Brie melts into the rich apricot jam, creating a perfect balance of savory and sweet.

Ingredients
  • 6-7 sheets pre-made phyllo dough
  • 180 g (6 oz) Président Brie, cut into small wedges
  • ¼ cup St. Dalfour Apricot Jam
  • 6 tbsp unsalted butter melted (for brushing on phyllo)
  • 1 tsp fresh thyme leaves
  • Optional: extra thyme for garnish
Instructions
  1. Preheat the oven to 375°F (190°C)
  2. On a clean work surface, stack the phyllo sheets, brushing each sheet lightly with melted butter before adding the next.
  3. Starting from the short end of the phyllo rectangle, place a row of Brie about 1 inch from the edge.
  4. Spread a layer of apricot preserves alongside the Brie, then sprinkle with crushed walnuts and fresh thyme.
  5. Roll the phyllo up tightly, burrito-style, to enclose the filling.
  6. Slice the roll into 2-inch pieces and place each piece into a muffin tin cup. Brush the tops with more melted butter.
  7. Bake for 25–27 minutes, or until the tops are deeply golden.
  8. Garnish with fresh thyme leaves and flaky sea salt before serving.
