Président Brie, Walnut and St. Dalfour Apricot Jam Phyllo Rolls

- 6-7 sheets pre-made phyllo dough
- 180 g (6 oz) Président Brie, cut into small wedges
- ¼ cup St. Dalfour Apricot Jam
- 6 tbsp unsalted butter melted (for brushing on phyllo)
- 1 tsp fresh thyme leaves
- Optional: extra thyme for garnish
Instructions
- Preheat the oven to 375°F (190°C)
- On a clean work surface, stack the phyllo sheets, brushing each sheet lightly with melted butter before adding the next.
- Starting from the short end of the phyllo rectangle, place a row of Brie about 1 inch from the edge.
- Spread a layer of apricot preserves alongside the Brie, then sprinkle with crushed walnuts and fresh thyme.
- Roll the phyllo up tightly, burrito-style, to enclose the filling.
- Slice the roll into 2-inch pieces and place each piece into a muffin tin cup. Brush the tops with more melted butter.
- Bake for 25–27 minutes, or until the tops are deeply golden.
- Garnish with fresh thyme leaves and flaky sea salt before serving.
