Mini Rosemary Cheddar Puffs with Président® Gourmet Pairings™ Aged White Cheddar With Apple Chutney

Ingredients
  • 1 package Président® Gourmet Pairings™ Aged White Cheddar With Apple Chutney
  • 1 package Frozen Puff Pastry (2 Sheets)
  • 24 whole Toasted Pecans
  • 1 whole Egg Whisked
  • 1 1/2 tbsp Fresh Rosemary Minced
Instructions
  1. Thaw sheets of puff pastry in the refrigerator overnight, or on the counter for 2 hours.
  2. Preheat oven to 400 degrees F.
  3. When soft, use rolling pin to roll each sheet of puff pastry once to lightly stretch.
  4. Cut three equal vertical lines down each piece of puff pastry using a pizza cutter, to make three long strips. Then cut each strip into four equal sized squares.
  5. Grease a mini muffin tin. Then press bottom of each puff pastry square into holes. Fill with 1 teaspoon of Président® Gourmet Pairings™ Aged White Cheddar With Apple Chutney, getting about equal parts cheese and chutney in each teaspoon.
  6. Add teaspoon of filling into each puff pastry square, then a toasted pecan pressed down into spread. Bring 1 set of diagonal corners of each puff pastry together, and pinch seams to secure.
  7. Brush outsides of puff pastry with egg wash, and sprinkle with rosemary. Bake for 18-20 minutes, until puffs are golden brown. Remove from oven and let cool in pan for 5 minutes. Then run knife around the edges to pop them out of each tin.
  8. When fully cool, top each puff with a bit of apple chutney and serve.
