Checkerboard Salad with Président® Feta Chunk

4Ingredients
- 1 large or 2 medium beets, peeled, roasted, and cut into 1" cubes (raw beets work too for extra crunch)
- Balsamic glaze, drizzled
- 1 large or 2 medium cucumbers, peeled and cut into 1" cubes
- Handful of large grape or cherry tomatoes, ends trimmed so they stand upright
- 1-2 8-oz blocks of Président® Feta Chunk, cut into 1" cubes
- Extra virgin olive oil, drizzled
- Freshly ground black pepper
Instructions
- Roast beets in the oven for about 40 minutes, or prepare raw.
- Drizzle balsamic glaze onto a plate or platter in a decorative fashion (alternatively, drizzle over the salad once assembled).
- Create a row by alternating cubes of beet, cucumber, tomato, and Président® Feta Chunk. Continue until you’ve formed a checkerboard pattern.
- Finish with a drizzle of olive oil and a generous grind of black pepper.
