PRÉSIDENT® LACTOSE FREE FETA GREEN LEAF & TOMATO SALAD WITH ZESTY LEMON MINT VINAIGRETTE

A light and zesty green salad made with fresh greens, cherry tomatoes, red onion and Président® Lactose Free Feta, lightly dressed with a lemon mint vinaigrette. Finished with a generous topping of Président® Lactose Free Feta Crumbles and freshly chopped mint to bring the whole dish together.

Lemon Mint Vinaigrette Ingredients:
  • 2 tbsp of fresh squeezed lemon (juice of 1/2 lemon)
  • 1/4 tsp lemon zest (zest of 1/2 lemon)
  • 1 whole small shallot, grated
  • 1/2 tsp dijon mustard
  • 1/4 tsp kosher salt
  • 1/4 tsp of freshly cracked black pepper
  • 1/4 cup of avocado or your favorite salad oil
  • 1/4 cup chopped fresh mint (reserving some for final garnish)
Instructions
  1. Add all ingredients, except oil (reserving 1/2 of the mint) into a bowl - whisking together while adding oil a drizzle at a time until completely emulsified.
Salad Ingredients:
  • 4 cups (8oz package) of freshly torn or roughly chopped green leaf lettuce
  • 12 oz of red and yellow cherry tomatoes, halved
  • 1 whole small red onion, thinly sliced
  • 6 oz package of Président® Lactose Free Feta Crumbles (reserving some for final garnish)
Instructions
  1. Combine lettuce, tomatoes, and red onion along with 6oz of Président® Lactose Free Feta Crumbles to a wooden salad bowl.
  2. Add dressing, toss until all ingredients are lightly coated.
  3. Top with remaining Président® Lactose Free Feta Crumbles and garnish with remaining mint.
