Smoky Summer Street Corn with Président® Feta Crumbles

Street Corn Ingredients
  • 4 large ears of corn
  • 1 tbsp neutral oil
  • 1 red bell pepper
  • 1 orange bell pepper
  • 1 green bell pepper
  • 1/4 red onion
  • 1 jalapeno
  • 1 bunch of cilantro
  • 1/2 cup Président® Feta Cheese Crumbles
  • Salt, to taste
Salad Instructions
  1. Toss the ears of corn with the neutral oil until evenly coated. Cook the corn in a hot skillet, grill pan, or air fryer until lightly charred and smoky on the outside but still crisp and juicy inside. Remove and let cool slightly.
  2. While the corn cooks, dice the red, orange, and green bell peppers. Finely mince the red onion, jalapeño, and cilantro.
  3. Once the corn is cool enough to handle, slice the kernels off the cobs.
  4. Add the corn, peppers, red onion, jalapeño, cilantro, and feta to a large mixing bowl. Toss everything together.
Dressing Ingredients
  • 1/2 cup mayo or Greek yogurt
  • Zest and juice of 2 limes
  • 2 tbsp smoked paprika
  • 2 tbsp mild chili flakes
  • 1 tsp salt
  • 1 garlic clove
  • Water, as needed to thin
Dressing Instructions
  1. In a bowl, whisk together the mayo or Greek yogurt, lime zest and juice, smoked paprika, chili flakes, salt, and minced garlic. Add a splash of water as needed to loosen the dressing until it reaches your desired consistency. Taste and adjust seasoning or spice level as needed.
  2. Add the dressing a little at a time to the corn mixture, tossing between additions, until the salad is coated to your liking.
  3. Taste and adjust with additional salt if needed. If you like extra heat and smoky flavor, finish with a few more tablespoons of mild chili flakes.
  4. Serve with tortilla chips, spread onto tostadas, spooned over tacos, or however you like.
