I’m a bit on a mission to eat everything on toast and this lentil version could easily be an elevated dinner every night. Melt 2 tablespoons of @presidentcheese butter then add minced shallots (about 1 small one). [ad] Cook the shallots then add 1 cup cooked Le Puy Lentils and a hefty pinch of crushed red peppers and salt. . Heat a broiler and butter two pieces of bread. Place under the broiler and let toast until the bread is just golden. Remove, add the lentils and a few slices of @presidentcheese swiss. Return to the broiler and toast until the cheese is browning. .
