Grilled Pizza Salads

Grilled pizza salads are an easy dish for impromptu entertaining or weeknight dinners. Combining grilling out, homemade pizza and summer-fresh salads, this recipe is perfect for the summer season.

Hummus, Goat Cheese & Arugula Pizza Salad Ingredients
  • Homemade pizza dough (see below)
  • Homemade hummus (see below)
  • Arugula salad with orange vinaigrette (see below)
  • 2 cup diced tomatoes
  • 1 1/2 cup diced cucumber
  • Président® Fresh Goat Cheese
Hummus, Goat Cheese & Arugula Pizza Salad Directions
  1. Lightly coat pizza dough with olive oil.
  2. Grill pizza dough on a hot grill over a piece of aluminum foil until desired crispiness is achieved.
  3. Remove pizza dough from the grill. Spread a thick layer of hummus on top of the crust with a rubber spatula.
  4. Sprinkle diced tomatoes and cucumbers over the hummus, and top with the arugula salad.
  5. Add a generous helping of Président® Fresh Goat Cheese, and serve.
Homemade Pizza Dough Ingredients
  • 4 cup all purpose flour
  • 1 tsp active dry yeast
  • 1 tsp salt
  • 1/3 cup olive oil
  • 1 1/2 cup warm water
  • 1 tsp black pepper
  • 1 Pinch of sugar
Homemade Pizza Dough Directions
  1. Fill a glass measuring cup with 1 1/2 cups warm water.
  2. Sprinkle the yeast over top to allow it to start activating.
  3. In the bowl of a stand mixer, combine flour, salt, pepper and sugar.
  4. Set the mixer to slow and drizzle in the olive oil until just combined. Slowly pour in the water with the yeast, and mix until wet and dry ingredients are just combined.
  5. Drizzle a bit of olive oil into a second mixing bowl.
  6. Transfer dough to new mixing bowl, working it with your hands to form a ball.
  7. Lightly coat with olive oil, cover the bowl with plastic wrap and store in the fridge.
Homemade Hummus Ingredients
  • 2 Cans chickpeas/garbanzo beans
  • 3 tbsp chickpea liquid
  • 4 garlic cloves
  • 1 1/2 tsp sea salt
  • 1/3 cup tahini
  • 6 tbsp lemon juice
  • 1 tsp black pepper
Homemade Hummus Directions
  1. In a food processor, mince garlic cloves.
  2. Add chickpeas, chickpea liquid (reserved when draining the chickpeas), salt, tahini, lemon juice and black pepper.
  3. Process until smooth, adding additional lemon juice and/or chickpea liquid to achieve desired thickness.
Arugula Salad with Orange Vinaigrette Ingredients
  • 3 cup fresh arugula
  • 2 tbsp extra virgin olive oil
  • 5 tbsp fresh orange juice
  • Sea salt & cracked black pepper to taste
Arugula Salad with Orange Vinaigrette Directions
  1. In mixing bowl, toss 3 cups fresh arugula with 2 tablespoons extra virgin olive oil, 5 tablespoons fresh squeezed orange juice, sea salt and fresh cracked black pepper to taste.
Pistachio Pesto & Cranberry Feta Spring Green Pizza Salad Ingredients
  • Homemade pizza dough (see above)
  • Pistachio pesto (see below)
  • Pistachio pesto (see below)
  • 3 Sliced Apricots
  • 2 Diced Scallions
  • cup Président® Regular Feta Crumbles with Cranberries
Pistachio Pesto & Cranberry Feta Spring Green Pizza Salad Directions
  1. Lightly coat pizza dough with olive oil.
  2. Grill pizza dough on a hot grill over a piece of aluminum foil until desired crispiness is achieved.
  3. Remove pizza dough from the grill. Spread a thick layer of pesto on top of the crust with a rubber spatula.
  4. Top with spring green salad and sprinkle generously with apricots, scallions, and Président® Feta Crumbles with Cranberries. Cut and serve!
Pistachio Pesto Ingredients
  • 1/2 cup roasted, salted pistachios (shelled)
  • 5 cup Packed Basil
  • 4 Cloves garlic
  • 1 1/2 cup Extra virgin olive oil
  • 3 tbsp lemon juice
  • 1 tsp black pepper
Pistachio Pesto Directions
  1. Using a steel blade, process pistachios and garlic in food processor for approximately 30 seconds.
  2. Add basil, lemon juice and pepper, and begin processing, slowing drizzling in the olive oil.
  3. Continue processing until ingredients are thoroughly combined and become creamy in texture.
Spring Green Salad with Lemon Vinaigrette Ingredients
  • 3 cup fresh spring greens
  • 2 tbsp extra virgin olive oil
  • 5 tbsp fresh lemon juice
  • sea salt & cracked black pepper to taste
Spring Green Salad with Lemon Vinaigrette Directions
  1. In mixing bowl, toss 3 cups fresh spring greens with 2 tablespoons extra virgin olive oil, 5 tablespoons fresh squeezed lemon juice, sea salt and fresh cracked black pepper to taste.
