2Quick & Easy Whipped Feta & Veggie Pool Sandwich
- 1 package Président® Feta Crumbles
- 1/4 cup Greek yogurt
- 1 tbsp Olive Oil
- Parsley for serving
- Juice of half a lemon
- 2 whole Persian cucumber
- 1 whole Fresh tomato
- 4 whole Romaine lettuce leaves
- 4 Slices of wheat bread
- 8 oz Tzatziki
Quick & Easy Whipped Feta & Veggie Pool Sandwich
- In a food process or immersion blender, add feta, Greek yogurt, lemon juice, lemon zest, olive oil. Blend until smooth
- Add parsley and blend until combined – set aside
- Prep vegetables by slicing thinly using a sharp knife of mandolin
- Lightly toast 4 pieces of wheat bread
- On one half add large scoop of whipped feta. On other half add large scoop of tzatziki
- Layer sliced tomato, cucumber, and lettuce on one half of bread
- Top with other half of bread – cut in half and enjoy!
