Three-Grain Veggie & Feta Salad

This salad uses three gluten-free grains for a fun, nutty flavor that is balanced with grilled vegetables and a bit of cilantro and lime juice. Président Feta enhances theses flavors with its crumbly creaminess.

Grilled Vegetables Ingredients
  • 2 Red peppers
  • 1 Onion
  • 2 Ears of sweet corn
  • 2 tbsp Butter softened
  • 1/2 tsp Black pepper
  • 2 tsp Smoked paprika
Grilled Vegetables Directions
  1. Light grill to medium-low heat.
  2. Cut pepper and onion into 1/4_ slices.
  3. Shuck corn and remove any silk. Rub each ear of corn with 1 tablespoon of butter and sprinkle evenly with black pepper and smoked paprika.
  4. Grill, turning vegetables occasionally, until charred on all sides.
  5. Remove and let corn cool slightly.
  6. Carefully remove kernels from cob.
Three-Grain Base Ingredients
  • 2 cup Vegetable broth
  • 2 cup Water
  • 1 tbsp Olive oil
  • 1/4 tsp Sea salt
  • 1/2 cup Millet
  • 1/2 cup Quinoa
  • 1/2 cup Sorghum
Three-Grain Base Directions
  1. In a pot, bring water and vegetable broth to boil with a pinch of salt and olive oil.
  2. Stir in sorghum, reduce heat to low, cover and let cook for 30 minutes.
  3. Stir in quinoa and millet, cover and continue cooking for another 15 minutes, until water has been mostly absorbed.
  4. Test the grains. If still chewy, add 1/4 cup of water and cook for another 1 to 2 minutes.
  5. Repeat until the grains are almost tender and there’s still a bit of moisture left in the pot.
  6. Remove from heat and allow to rest, covered, for 10 minutes. Salad Assembly
  7. In a large bowl, combine cooked grains, grilled vegetables, feta and cilantro.
  8. Combine olive oil, lime juice, salt, pepper and honey in small jar with lid. Shake well and pour over salad.
  9. Toss until everything is combined and well coated.
  10. Serve with extra lime wedges, if desired.

  • 1/4 cup Cilantro minced
  • 3 tbsp Olive oil
  • 2 tbsp Lime juice
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper
  • 2 tsp Honey
  • Lime wedges
Salad Assembly Directions
  1. In a large bowl, combine cooked grains, grilled vegetables, feta and cilantro.
  2. Combine olive oil, lime juice, salt, pepper and honey in small jar with lid. Shake well and pour over salad.
  3. Toss until everything is combined and well coated.
  4. Serve with extra lime wedges, if desired.
