Oven Baked Chicken Meatballs With Garlic & Herb Whipped Président® Feta

4Meatballs Ingredients
- 16 oz ground chicken
- 1 small white onion, grated then chopped
- 4 garlic cloves, grated finely
- 1/2 cup plain Italian style bread crumbs
- 1 egg
- 1 lemon, zest only
- Salt
- Optional: cilantro, basil, and dill to garnish
Meatballs Instructions
- To a bowl, add the ground chicken, egg, breadcrumbs, lemon zest, and grated garlic. Grate the onion using the large-hole side of a box grater, then give it a rough chop with a knife before adding it in. Season heavily with salt and mix with your hands until combined. Form into 18-20 equal-sized meatballs.
- Preheat the oven to 400°F. Place the meatballs on a greased sheet pan. When the oven is at temperature, cook the meatballs for 15 minutes or until cooked through.
Whipped Feta Ingredients
- 8 oz block Président® Feta Chunk
- 2 cups plain greek yogurt
- 2 garlic cloves
- 1 lemon, juiced
- 2 tbsp olive oil
- 2 tbsp cilantro, chopped
- 2 tbsp dill, chopped
- 2 tbsp basil, chopped
Whipped Feta Instructions
- While the meatballs are cooking, add Président® Feta into a food processor with the Greek yogurt, lemon juice, and garlic. Process for 20 seconds before drizzling in the olive oil. Run the food processor on high for 1 minute or until the desired consistency is reached. Fold in the chopped herbs.
- To plate, add a few spoonfuls of the whipped feta to a bowl, top with additional herbs, and then place the meatballs on top.
